If you’ve been following along, we started this week with homemade puff pastry, a vegan almond pesto, and we’re finishing up the week with the finished product: heirloom tomato tart. Isn’t it a beaut?
I used mini heirloom tomatoes. They were just too darn cute to resist.
You don’t have to make everything homemade, but I’d love to hear if you do!
All the flavors really compliment each other in this dish, and I really liked the way my pesto and tomatoes tasted together.
The pesto is vegan, which defeats the purpose with this puff pastry since it’s basically baked butter.
Great as an appetizer (or even a meal) if you want to share a slice or two with friends.

- 1 sheet puff pastry
- 1/2 cup basil spinach pesto, (or your favorite pesto)
- assortment of mini heirloom tomatoes, , halved lengthwise
- sprinkle of sea salt
I chose to bake the puff pastry before putting the pesto and tomatoes, but you can bake the pastry with the toppings if you prefer it to be a hot dish.
