When I get sucked into the black hole that is called Pinterest, sometimes I get so hungry that I run out of time to make any of the delicious, mouth-watering creations that I just scrolled through for hours.

In these times of hunger-desperation, you need quick go-to meals that still satisfy the culinary instinct to whip up something fancy. (Is it just me, or does avocado make everything fancier?)

Enter the avocado tomato English muffin.

I added slices of fresh mozzarella, and added a pinch of salt to the tomatoes – this really brings out the flavor!

Since you're only using half of a precious avocado, use the other half for this smoothie or use it for half a batch of my no mayo egg salad!

Avocado and tomato English muffin

Ingredients

  • 1 English muffin
  • 1/2 avocado , sliced
  • 2 tomato slices
  • 2 slices cheese (I used fresh mozzarella)

Instructions

  • Cut English muffin in half with a knife. Pile on cheese, tomato, and avocado slices. Add salt if desired to enhance flavor.
