Ingredients

  • 2 fresh, ripe peaches , chopped or sliced
  • 2 fresh, large tomatoes sliced
  • 4 ounces fresh mozzarella cheese , chopped or sliced
  • fresh basil leaves (I used about 15 small)
  • extra virgin olive oil , for drizzling (I used about 2 tablespoons)
  • balsamic vinegar or glaze , for drizzling (I used about 1 tablespoon)
  • sea salt (I like pink himalayan)
  • pepper , optional

Instructions

  1. On a large plate, arrange peaches, tomatoes and mozzarella cheese. (Can make them into "sandwiches" or just throw them together). Top with fresh basil leaves.

  2. Drizzle with olive oil and balsamic vinegar or glaze. Sprinkle with salt and pepper, and eat!
