Fruit salsa made from apples, oranges, kiwis and strawberries and tortilla chips baked with cinnamon sugar for dipping. Colorful party appetizer or healthy dessert! Vegan.

Ingredients

For the fruit salsa (no-bake):

  • 2 apples
  • 2 teaspoons lemon juice
  • 1 cup chopped strawberries
  • 2 kiwis , peeled and chopped
  • 1 orange , peeled and chopped
  • 2 tablespoons brown sugar
  • 2 tablespoons apple butter or apple jelly

For cinnamon chips (bake):

  • 8 large flour tortillas
  • water
  • 3 tablespoons sugar (grandma's recipe calls for 1/4 cup, play around if more sweetness is desired)
  • 1 tablespoon ground cinnamon

Instructions

  • Chop the apples and put in a medium bowl. Add lemon juice to prevent browning. 
  • Chop remaining fruit (strawberries, kiwi, orange) and add to the apples along with the brown sugar and apple jelly. Stir to combine.
  • Chill in refrigerator.
  • Meanwhile, preheat oven to 400°F for the cinnamon chips. In a small bowl, combine sugar and cinnamon.
  • Lightly brush tortillas with water (so the cinnamon and sugar will stick). Cut or tear tortillas into squares. 
  • Spread out tortilla on cookie sheets lined with parchment paper, careful not to overlap too much. Sprinkle cinnamon sugar over tortillas.
  • Bake for 7-8 minutes or until crispy.
  • Serve fruit with cinnamon chips. 

Notes

Can make fruit salsa several hours ahead of time if desired to let marinate in the refrigerator. Will not keep much longer than a day - if you have leftovers you can freeze them, and/or add with ice to make a smoothie!
