Ingredients

  • 4 cups cut-up tomatoes , variety of colors and sizes
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon sea salt
  • fresh parsley

Instructions

  • Add tomatoes to a bowl, drizzle with olive oil and stir to combine. Top with sea salt and fresh parsley.
  • Pack to-go or serve immediately/ Will last covered in the fridge for a day or two.
