Sometimes you just need a good gluten-free cookie.

A good crispy and crumbly cookie.

I like a soft cookie as good as the next gal, but the crunchy texture of these flour-less ones with healthy oats and peanut butter are some of my favorites.

Yum! So easy to make when something last minute is needed, yet it delivers! Very yummy! Peanut butter = protein. Oatmeal = good for the heart and lowering cholesterol.

I just made these cookies and they turned out great — crisp on the outside and chewy on the inside. I only had chunky peanut butter, but it didn’t matter. Also, I had toasted oats and used them. Next time, I may add some mini chocolate chips and/or cinnamon. My gluten free friend will love these! Thanks for the recipe!
